Vegetable Lentil Soup with Leeks

What's a girl to do during a snowstorm? Make a big ol' pot of this amazing Vegetable Lentil Soup with Leeks, of course! (Did I mention I love leeks?)

Notice that just 1 cup has 18 grams of protein and less than 1 gram of fat. Healthy, immune-strengthening, satisfying, and delicious!

 

Vegetable Lentil Soup

(1 cup has 18 grams of protein and <1 gram of fat.)

4c onions

4c leeks, white parts only

1T minced garlic

3c chopped carrots

3c chopped celery

16 oz French green lentils

2T red wine vinegar

1T dried thyme

2t dried oregano

2t cumin

1/4c tomato paste

16 cups (4 quarts) of low sodium vegetable broth/stock

Fresh cracked pepper

 

Dry sauté onions, leeks, and garlic.

Add carrots and celery.

Then add rest of ingredients.

Bring to a boil then reduce heat to med/low and simmer for 45-60 minutes until veggies and lentils are tender.

I sprinkled extra thyme on top as well!
